oooooooo baby baby...

Yesterday, one of our local readers was kind enough to drop off a bag of Pumpkin Chocolate Chip cookies at our office. First of all, how awesome is that? And second....OMG, OMG you guys—the cookies were seriously amazing. So amazing, in fact, that I ate four of them before my boss took the entire bag into her office and held them hostage for the remainder of the day. Boo.

Anywho....the aforementioned reader was kind of enough to leave us with the recipe for these heavenly snacks. Enjoy!

Recipe for the Best Cookies on the Planet. Period.
1 cup butter (2 sticks) softened
1 1/2 cups sugar
1 egg
1 15oz can pumpkin
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
12-16 oz chocolate chips
1/2 cup almonds (optional)

*Cream butter and sugar with mixer. Add egg, pumpkin and vanilla. Mix well. Combine flour, baking soda, baking powder, cinnamon, and nutmeg. Add to pumpkin mixture. Fold in chocolate chips and almonds. Drop by spoonfuls onto foil-lined cookie sheet. Bake @ 350 for 15-17 minutes. Makes 2-3 dozen.
